These potatoes are the best so far I have ever tasted or cooked. They cooked really well and will definitely be buying it again. The potatoes were very clean and easy to pierce. Packaging is eco friendly which is a bonus.
Zesty Mexican Jackets
Serving suggestion for 4 people
Ingredients
- 4 Harry & Percy's Baking potatoes
- 1 tbsp dried cumin
- 100g Cheddar cheese, grated
- 200g tinned kidney beans, drained
- 2 large tomatoes, roughly chopped
- 1 tbsp fresh coriander, roughly chopped
- 1 lime, zested
- pinch chilli powder (optional)
Method

Preheat the oven to 220°C/fan 200°C/gas 7. Wash the potatoes well. Dry and prick the skin with a fork. Place directly onto an oven shelf and bake for 1-1½ hours or until the skin is crisp and the flesh tender.

Mix the Cheddar cheese, kidney beans, tomatoes and coriander together. Add the lime zest and cumin then mix well to combine. Remove the potatoes from the oven and make a cross in each potato and split open. Spoon the cheese mixture into each jacket potato and sprinkle with a pinch of chilli powder if desired.
