We only select the right potatoes that make the perfect chips, which have a high dry matter content ideal for frying, creating wonderfully fluffy and golden chips.
We assess the quality of our potatoes throughout the year to ensure they are seasonally at their best for chipping.

The best potato
These are the best potatoes for roasties, chips or wedges. Perfect crispness with fluffy insides. Can't be beaten.
Very Crispy
I normally use Maris pipers for my homemade triple cooked chips but decided to give these a try. I used my normal method rather than H&P's suggestion and they made some really crispy on the outside and fluffy on the inside which to me is the perfect chip. You get a few more crispy "bits" as well!

Double Cooked Oven Chips
Serving suggestion for 4 people
Ingredients
- 750g of Harry & Percy's Chipping potatoes
- 2 tbsp vegetable oil
- 1 tbsp cornflour
Method

Peel and cut into chips. Place in a bowl under running water to wash the starch off, then drain and pat the chips dry.

Place in a pan with just enough water to cover and parboil for 5 minutes, drain well and leave to cool. Place in the freezer for 1 hour.

Preheat the oven to 220°/fan 200°/gas 7. Heat 2 tbsp of vegetable oil in a shallow, non-stick roasting tray. Remove chips from freezer, add a light coating of cornflour and mix well. Place the chips in the roasting tray and bake on the top shelf of the oven for 30 minutes, turning often until golden.
